Q: does anyone know how much weight the saw horse would typically support? I need a pair of tall sawhorses for my truck canopy, weighs approx 300#

That's only 150# on each. I'd worry more about the cross pieces; I use 2 X 6.

You determine the height when you cut the 2x4's to create the legs. Don't forget that you need two pair of these to be of much use. I suggest cutting the 2x4's to a length of 30".

Q: What angle do I need to cut the legs so they sit flat?

35 degrees. Or you can take a 2x4 sit it in the leg brace and then mark your leg off of the brace. You will use the same degree on both ends of the two x four.
