Victoria 10.5-Inch Cast Iron Comal Griddle Pan with a Long Handle, Preseasoned with Flaxseed Oil, Made in Colombia

I have given up on making flour tortillas at home because it's not practical to make dough with sufficiently low moisture and the kind of saturated fat that would mimic the store bought fresh tortillas. Instead I make a flatbread dough using olive oil as my fat, a higher moisture content, salt, and baking powder. I use a Victoria tortilla press to flatten out a piece of dough with some parchment paper (avoiding plastic), then stretch it out like pizza dough. I place the dough on this griddle when it reaches 450 degrees F using a simple infrared thermometer.

Love this pan for making Dosa. I had struggled with non-stick pans before. This takes a little bit of seasoning for it to work right. But man! once seasoned what a difference. The pan itself is heavy for its size and of very good quality,

For chapati I use it ,its very good not too much heavy .Just after u done clean with soapy warm to hot water with sponge, dry it and I put few drops of canola oil and spread all over and keep it for next use.

I have many pans. This one easily matches or excels brands like de buyer and lodge.It’s perfect size for a proper crepe. Relatively light weight for cast iron. I can handle it easily with 1 hand.I have made over 100 crepes and not one has stuck to the pan. I have also cooked many arabic pitas in it with great success.The pan heats up really quickly.This pan will not rust more or less than other cast iron pans. If you wash it using water make sure you are quick and to immediately soak every single water drop when you are done. Otherwise it will rust. If your pan rusted, it’s your fault. But there are ways to remove the rust, you can google it. That’s how I learnt in the past too.I bought the silicone handle for this pan but do not recommend it. It’s a bit too big and if you cook for a while the heat goes through it. Instead I now use a kitchen towel that I wrap around the handle and that gives me a better grip plus I can rotate the towel around if it gets too hot. Can’t do that with the silicone handle. Also the handle is half the price of the pan, totally not justified.Again, great pan. I will use it for the rest of my life.

This is the best cast iron pan I have ever used! Make sure you season it well and after your wash it(you don’t need to wash after each use) ensure you apply a thin layer of oil (I used coconut oil) again. I have used this for pancakes, dosas, uthappas, and even for cooking vegetables. Now you do need a very very light coating of oil depending on what you are using the pan for. After cooking you can often wipe the pan clean after scraping any leftover food particles (I am a vegetarian so this statement applies to vegetarian food being cooked).Also, please stop complaining about rust. This is a cast iron pan and cannot be thrown in the dishwasher, and after being washed it needs to be wiped immediately and apply a thin layer of oil again. But trust me if you take care of this pan and use it frequently it only gets better with time.I bought another one and gifted one too.

Bought this 3 days ago. This is after 2 uses...the tortillas stick to the pan...also it's very heavy (not grandma friendly). BUT it is chemical free and more importantly parrot safe so I'll keep it.
