Q: Where this product was harvested?

As far as I can remember, this was "made" in Paraguay. This product is very typical in South America, but not very popular in the Uk. Some big markets used to sell something similar, but when I wanted to buy, I didn't find anything over here.

Q: This may sound silly, but iscassava flour the same as cassava starch? Google couldn't answer it.

No they are different. Often people call Cassava starch 'Tapioca starch'. The difference between these two a small yet significant. They are both from the same root vegetable 'cassava' yet are extracted differently. In simple terms, Tapioca starch comes from the water drained from soaked/fermented cassava and when the water evaporates, you're left with a fine powder. Whereas Cassava flour comes from the grinding and powdering down of the whole root itself.When cooking; Cassava flour tends to be more robust and provide a thicker texture. It's also more grainy and so it's often used in breads etc.Tapioca starch is more fine and has a lighter texture. It is often used with other flours to create dishes. It can also be used as a thickner.Both are great for cooking and provide a brilliant gluten/grain free alternative.:)
