Q: What are the dimensions of the grill grate and griddle on the xl model?

The grill grate is 13 x 10. The cast iron griddle is 13.5 x 10, but it has a rim so the usable surface is a bit smaller. Please note that my unit arrived with a defective ignitor. Customer support is non-existent or closed due to Covid. Very disappointing

Q: I plan to cook salmon and I like some advice/tips.

I sear the Salmon first for short periods of time on the high rungs. Being careful not to burn. Then using the drip tray with butter I finish it off or you can use your oven to finish.
