I'm not sure how fast it is....I use it to make pizza crust using Caputo 00 flour. The pizza dough goes in the fridge for overnight rise. I like this brand very much. Guess it depends mostly on what you are using this for.

Each pack has 3 7gr packets so 21gr per pack. The order I have always made is a 3 pack of 3. So total would be 63gr.
