Q: Can i make just one larger pizza?

Absolutely! One bag will make a 16-18 inch pizza, just make one large dough ball.

Q: Do you refrigerate ir can you freeze until you use it?

If you don't plan to use it within a week, I recommend freezing it as the yeast can be "revived" after being frozen. However, yeast will not last forever if simply left at room or refrigerator temperatures for long periods of time. I keep my powder yeast in the freezer for over a year and it blooms nicely when added to warm water and sugar or honey. Also, keep in mind that this particular version of the product is only the dry ingredients and is not yet technically dough - you have to add water and mix and knead and allow it to rise just like regular dough. They also make this product as finished dough, but I'm not sure if they will sell it through Amazon - last time I checked, they only sold it through supermarkets frozen sections.
