How do these stick onto the handle? The last ones I bought were adhesive on one side...these aren't...am I missing something?!

It's worth clarifying that the 'Method of Operation' diagram in the product description is the correct way, sticking the tapered end of the grip to the bottom of the handle and working your way up towards the strings then cutting (as per Stuart's answer). But unbelievably the video provided demonstrates the WRONG way (you had one job!), with no glue at the bottom and hoping for the best that you finish wrapping it exactly to the length of the handle (as per Craig's and star1's answer.)

Do these go over the existing grip or to replace the old grip?

These go over the existing grip. I have found them fairly easy to put on and have made a difference, not to my play! but the feel of the racket. Some people don't like the slightly larger size of the grip which comes down to personal playing preferences. Have only been using them for about 6 months but think they will last for 1 to 2 years, depending on how many hours per week you play.

I don't want to increase the diameter of my racket too much. Will it matter if I peel off the foam ridge?

I'd leave the foam, just take-off the original grip. I use two normal grip layers plus this grip to make the head lighter, it's personal preference. I find the foam strip adds to the rackets grip.

Do I need to buy racket finishing tape on top of this?

No- you need to remove old gri, clean your racket handle and apply the new one. It includes the grip, a removable plastic cover and a piece of tape to keep it in place.
