Texture like Parmesan
Doesn’t have the same distinctive divine mouth feel that other red Leicesters have. Maybe I’ll grate it and make cheese grits. Or use it to make a cheese and onion sammich like the DI’s eat in British crime fiction. Or a cheese and pickle sammich. Thank heavens Publix sells Red Leicester now here in Florida. I have options.Truth be told I let this sit out half a day by accident and the taste improved considerably. Has a sweetish nut like flavor and is worth it. So I am amending my opinion.

My sister had a cheese assortment instead of a wedding cake
Red Leicester was a crowd favorite especially with my parents. I bought this to share with them. They liked it as much as the one we had at the wedding. It's rich and flavorful and sharp but not too sharp... It has a hint of Bleu but it's definitely not Bleu cheese.... Beautiful color and stands up well to both thick and thin crackers. Yum!
