Q: Is this the same as fufu flour?

You can say that. Fufu is often made with cassava but some people also make it with plantains or yams or tapioca. In the market, you may find a fufu flour blend that has a mix of other flours. Hope this helps.

Unfortunately, I don't know. I have used Otto's CF as well but in terms of texture and handling, I found this one much better and easier to deal with. Otto's is much more fine and very white. While Bob's is a little off white and very slightly coarse like wheat or all purpose would be. Maybe you should call Bob's and see what they say. And if you find the answer, please post it here for all of us. Thanks in advance.

Q: What country is this product from?

Cassava is a starchy root. Bob's mills it into flour in the states, but has to import the root itself. I don't have a bag at the moment for the country of origin. Cassava by another brand is sold at Walmart and comes from Vietnam of all places.

Q: Whats glycemic index?

As I understand it, the glycemic index refers to the amount of glucose/sugar a food releases when digested. An ingredient that has a high glycemic index causes blood sugar to release into the bloodstream right away usually, causing a spike, followed by a quick drop. This is not desirable for any of us and very unwanted for diabetics. Cassava is a good gluten substitute, but has a rather high glycemic index. ( The bag I got has the very best chocolate brownie recipe ever. I now it reads odd, but if you compile the recipe as written, it's better than bought or mix!)
