Q: Having trouble understanding how to know what stitch the symbols are saying

It's a bit confusing. I'll start with A which is color #6 on the fabric so all the yellow squares will be #6. I went through the whole pattern and wrote the colors or color of the symbol that are on the fabric next to the corresponding symbol on the paper. Makes it easier in the long run.

Q: Are the colours as viberent as pictured?

They are as close as you can get with thread.

Q: Is this on dark fabric or is it on white and full coverage?

Is not on dark fabric. Certainly not for a beginner, which I am, having a hard time following the grid so I will probably just wing it on my own.
