Q: Does the product say this thermometer is waterproof and thus can be left in outdoor planting beds for several days even if it rains heavily?

This item is not waterproof, meaning it can't be submerged in water. It is hermetically sealed so it can be left in the ground outside without the lens fogging on the inside, and rain won't get in.

Q: The manufacturer gives two different answers to the same question below about where in the probe is the temperature sensor. So which is it?

I apologize for the confusion. There is a bimetal coil (this is the sensor) in the stem that runs from the tip of the probe up about 2". The two dimples on the stem signify the top of the bimetal coil.

Q: How deep do you put it in for lawn soil temperature

I would use a depth of about 2 inches. Turf roots are primarily in the top several inches of the soil.

Q: There is a rubber piece on the end of my probe. I assume it comes off, but it is not removing easily so is it supposed to?

It's supposed to come off. The rubber piece is just to protect it . Mine was half off when I got it.
