The bar is a standard 3/4 inches, so I doubt it.

Q: Is this made out of MDF, particle board, or plywood?

It's made of (maybe high density) MDF with coat on the surface

Q: How much of the maximum cutting depth of my saw would be lost due to this sled? (What's the thickness of the floor of the sled?)

This is for small parts. You can’t bring the blade up any higher then the blue metal bars across the top of the sled anyway, so you don’t need to worry about the thickness of the floor limiting your cut. Your cut is limited by the top bar on the sled. Without measuring (not at home now) I’d say about 1-1/2” is the limit.
