Q: My concern is they will become easily dislodged how sturdy are they?

I've been using mine for well over a month and have had no trouble with them dislodging. I'm actually amazed at how sturdy they are. There is absolutely NOTHING flimsy about this organizer. I'm impressed...and very happy...with it! Much, much better quality than I expected.

Q: Do you have to use all of the trays or can you leave one out? Will they still stack together properly?

You could easily leave one out.

Q: What are the dimesnsions of the top shelf?

The top shelf is approximately 6.7" deep, but there are two different widths. The first 3.5" deep is only 12.5" wide. This is because of the sides of the tier below come up through the top shelf to hold it in place and it takes away from the total width. The other 3.2" of the top shelf is the same width as the bottom tiers.
