Q: When the leaf folds down does it lock into place? I'm thinking about installing in RV.

Yes it does lock in place. It has a lever to release it to fold it back up.

Q: Can you fit 2 normal size dinner plates on it? Will it work for dining?

It will fit 2 normal plates. BUT you’ll be hard pressed to fit 2 normal sized people at the table. You want a table that’s longer.

Q: Which anchors are the best to attach the 31.5 x 23.6 floating desk gainst drywall and studs (may not have studs that match up against holes)??

We used the included hardware into the studs.
