Accurate temp and time control. Low and slow cooking times
I took my first step into Sous Vide cooking but not in the traditional style. I used the Sous Vide machine to cook a pressed ham for sandwich meat. I was surprised how good the meat tasted. Way different from storebought. I need to experiment with times and temps, and, I need to use about 1/2 pound less in the meat press. I stuffed 2.5 lbs. into the pot and it was a little too much and the heavy spring pushed out a lot of juice. BUT, no problem for me, I just slathered on some mayo and made a great tasting sandwich.I am sold on this style of cooking and I can't wait to try new recipes. My Vpcok Sous Vide machine worked like a charm. And after I re-read the instructions a couple times I figured out the timer and temp controls. After that it was smooth sailing. One thing I did wrong...I used a pot that was too big and too tall for the cooking machine and ran out of water once. Practice makes perfect, so I better get stared.Thanks Amazon and thank you Vpcok for a nice easy to use piece of kitchenware. I will recommend the brand and that Amazon is the place to buy it.Update: I am trying to use the sous vide machine for making pressed meat in a Ham Press. The Press lid is about 7" high and finding the right pan to hang the sous vide machine on so I van make sure I have enuf water but not so much that water runs inside the press. I also did use it for cooking meat in a vacuum bag and it was easy to find a middle measurement of water. I wonder, do any one of you use the sous vide machine to cook in a meat press?

Good basic immersion heater
This water heater / circulator is priced right and works the same as more expensive heaters. I use it on daily basis to cook meat and to do reheating without overcooking. I like the colored band that lets me see the status of the heater, whether it is preheating, heating normally, or shut off. I would prefer that the heater not have a 2-hour timer by default and instead allow for an untimed mode where the heater just stays on by default. The timer takes two seconds of button pressing for each hour of time set, so for a 24-hour cook, I have to stand there for 48 seconds holding the timer. The manufacturer should change the firmware to have an exponential speed up on the timer, so that it is not necessary to press and hold the button as long. With exponential speed up, the first two seconds of pressing gives you 1 hour, the next gives you 2 hours, the next gives you 4 hours, the next gives you 8 hours, etc, so that it only takes about 10 seconds for a very long cook times.

Good, with a few caveats
It works within a few degrees. I have to adjust mine up to get the temperature I want. My bigger concern is the clip that attaches it to the pot or box. It seems flimsy and tends to fall off altogether. And as some other people have noted, if you want to cook for many hours the timer only moves up a minute at a time, so you have to push the timer button a lot.Mine registered in Celsius, but I learned somewhere that if you hold the temperature button down for 2 seconds it will change to Fahrenheit. Easier for this American! For under $50 it gets the job done, and as I don’t anticipate using it daily it is just fine for my needs. Very quiet, rings that indicate heating are very helpful. Good water circulation.
