Q: Will the whisk pull out of the handle like they they pull out of the wooden handles? I don't want it to.

I have both the 9 inch and 11 inch whisks and the wire started pulling out of the metal handles in less than 2 months of light use. It is impossible to keep the wire portion in the handle. Do not buy.

Q: Does water collect in the handle at all?

I just checked mine and did notice some water come out of the handle at the top, after I twisted the top a bit. Generally I have no problems with it and wash it in the dishwasher. Until today, I have never noticed water coming out of it. I have had this almost 2 years.
