Love a good knife.It cuts well but needs a good amount of respect.The cutting edge is fairly sensitive and is easily dinged, don't just stick it in or bump the edge.I have to clean it and hang it as soon as I'm finished cutting.The knife is sold under many different names and brands.Many of the brands claim it to be hand forged in Japan showing pictures of a worker with a forge and a hammer. Some of the advertising shows him grinding them by hand. They have been claimed to use many different types of steel. It appears to be stamped 1810 stainless. What appears to look like hammer marks on the black portion of the blade are made by a press. I bought 4 of them from different places and all the hand hammered marks are identical in all the knives. They are marketed on the web as a hand made Japanese knife but are far from it. I think the only thing hand tooled about them is sanding the handles to match the steel blade.Don't get me wrong, besides the sharp edges in the finger hole the are a well made sturdy knife that comes with a very nicely machine ground edge. cuts right thru paper when new and has good control cutting thick slices of meat.I ordered some of them online and after a month waiting for delivery I found that Amazon offers them. So I purchased one and received it with a scabbard in 3 or 4 days for a very good price.Thank you Amazon.Great delivery and a good product made in china

Good knife for cheap
My husband uses this to trim his briskets. Donโt need to spend a lot on a knife for these kinds of things. Great knife!

Finally nailed it!
Given as a gift to my BIL for the holidays after many years of failed attempts at gift giving. He loved it! Uses it all the time, according to my sister, and brags about it to his friends and family. Considering how difficult it is to buy for him, I am guessing it is a great product.
