Q: Could this be used for food safety in canning?

I am not too familiar with canning foods, but if u need to measure ph i would assume this would work well. Although there may be a less expensive option.

Q: can i use this one for cheese and salsas ?

As long as it is in liquid form when you test it should work fine. When I test the ph of a solid, I have to mix it with liquid and let it settle per manufacturers directions.

Specifications say -5 to 50 degrees Celsius ( 23 to 122 degrees Farhrenheit)

Q: Does this device come calibrated out of the box?

Yes, but you should either check it against another meter or drop test. Periodic calibration using available standard solutions is necessary to assure reliable readings. Make sure it is stored with storage solution in the cell cup.
