Very cool! Versatile. Easy to use
The heart of this kit is the adjustable rolling pin, which has adjustment washers in 1/16", 1/8", 1/4", and 3/8", making it suitable for ravioli, lasagna, and pappardelle pasta. And cookies, many pastries, and pie crust. This is in addition to the applications given in the kit's recipe book, which include various empanadas, hand pies, and potsticker/gyozu. For pot stickers and gyozu you may want to use the 1/16" washer to flatten the dough uniformly to that thickness, then use the rolling pin without washers to make the dough a bit thinner.Examples of the results using the forming tool, which works very nicely, are slightly smaller than normal empanadas, slightly large potstickers, and sealed hungarian kolachi pastries that are about the normal size.Consider second-guessing the recipe book because the recipes include advice for using very thick sheets of dough. This may be suitable if you're making steamed dumplings, but most things like potstickers and empanadas are better served with 1/16 or 1/8 inch sheets of dough. The best thing about the recipe book is that it identifies dumplings for many cultures so you can research them in greater depth yourself.This is a nice kit for exploring new things to cook, and I think it would make a great gift for a foodie.One other advantage to this kit is that it allows you to make non-traditional wrappers for things like empanadas. Traditional dough uses lots of butter or lard. I use a piadine-style dough that is made from flour, water, salt, and olive oil.The adjustable rolling pin is great for thin cookies that need to have consistent thickness, like linzer cookies (which have cookie about the thickness of oreo cookie.)The cutter works well, though you will want to have a paring knife handy to cut through dough that the cutter did not press through. The spatula for filling the dumplings is very practical, and better than a spoon for the purpose.

Better in theory than in practice.
This roller seems like a great idea until you use it. First without handles sticking out the sides your hands have to be on the roller all the time. I didn't realize how weird it would be to roll dough like that. Also if you have the guards on the ends to set your depth, your dough can never be wider than the roller. So if you don't get to the thinness you want, you'll have to remove part of the dough to prevent rolling the depth wheel through your dough. It also takes a long time to dry after washing because water gets in where the ends screw into the roller.I have the same feeling about the cutter and press. First my cutter wasn't flat so part of each circle didn't cut properly. Second the cutter is slight smaller than the press instead of being slightly larger so when the dough shrinks a bit with the cutting it's too small. Finally, I just found the press to be frustrating. Dough stuck to it. The circles had to be filled with just the right amount of filling which made each dumpling dough heavy. After a frustrating 15-20 minutes, I gave up and just sealed my pirogi by hand.

Time Saver - takes a lot of work out of making Pierogis and Vareniki!
So what do you get here?- Roller (with different rings so you can consistently make the dough the same thickness, and vary the thickness depending on which size ring you put on)- Dumpling cutter. This is ingenious and I'm surprised I haven't seen one of these before! It literally just rolls over the dough cutting perfect circles. Much faster and cleaner cuts than the old "upside down coffee mug" trick my Polish ancestors used to use.- Dumpling folder. Simple metal construction. Not much else to be said here other than it works as expected.WIth 2 kids under 4 years old in the house and a backlog of strong Eastern European recipes for pierogis and vareniki, this kit takes a lot of work out of making dumplings.For those who don't have a backlog of good family recipes, the seller included a card in the package with access to an online cookbook with recipes.Added bonus - the items are kid friendly! So when you're not using them for making food, they're great tools to sculpt kinetic sand! My 4 year old can attest :)

Their idea of thin is a joke.
When I saw this product, I had to have it. Being able to take the guess work out of dough thickness was a no brainer. Unfortunately, the first three roller rings produce a very thick layer of dough. I can't remember any dumpling, empanada or ravioli having this thickness. The dough to filling ratios are all wrong. Using a regular rolling pin is better.The ring failed to cut through the dough on several occasions and repeated pressure distorted the roundness of the ring. Additionally, I would favor a slightly larger ring, because most of the dough recipes had a tendency to shrink after cutting the circle. Normally, I let the dough rest longer and try not to over knead to ensure the right elasticity but if the ring cut a slightly different circle, it would not matter.The Folder worked OK after a little practice. Just make sure the circle of dough covers all of the mold. Trimming excess dough is much easier then folding a dumpling and leaving a gap.The small recipe book is a great addition to the product, the dough recipes are a little questionable, because they are geared to the oversized disk. The filling recipes are spot on. Tasty and fun.It would have been easy to give this a 5-star rating if the rolling pin rings produced a reasonable thickness for the dough and the cutting ring was not only slightly larger but sturdier.

Everything but the dumpling maker was great
The dumpling maker itself is not useful, too small and flimsy. The rolling pin, measuring rings and circle cutter was perfect so I didn’t return it.
