Amazing Yeast
So I’ve been using Caputo brand forever and it’s the best for pizza. (And other things I just use it for pizza) I never like using dry yeast when making pizza I always get fresh. Lately it’s been getting hard to get good fresh yeast that isn’t dead. I bought this and let me tell you it takes a little getting used to but it’s very consistent. They have different rise recipes and the texture of the dough is great. The only issue is how much is in the can. You need to refrigerate after opening and it only last a couple of months. When you only need a gram or two there is no way you can use the whole can before it goes bad. If you have a vacuum saver measure out certain amounts and vacuum it and leave in fridge last forever.

Maybe not as quick rising as some of the grocery store yeast... but worked well for our pizzas!
So far so good... this is good quality yeast from what I can tell. I did notice that my rise wasn't quite as "Aggressive" as using some of the "grocery store" dry yeasts... Maybe better for long-cold fermentation though?

I really like this yeast... The short and sweet of it is that I would buy this yeast again.
I've tried a handful of yeasts over the years, I just like how this one has been really consistent. I've done a few 6 hour ferments and it's offered really flavorful results. Usually I have to do overnight or a poolish ferments to get similar flavor. This has worked out great mixing all the ingredients together and when the time is up it's ready to form and bake or do fry bread. Other methods I've done in the past require too much fiddly prep requiring multiple kneadings or separating part of the flour out, waiting to add salt, etc. This one I've so far had really consistent results and has been the least amount of work and prep. I think the key is that I use a rather high moisture content recipe so this helps the yeast dissolve more readily and the yeast grains are very fine compared to other brands I've used in the past. Working wetter dough is more of a challenge but after learning how to handle it properly I actually prefer the results.I also don't really know why but I like that this comes in a tin(maybe nostalgia?). I just would have liked that the lid offered a more airtight seal. I have to add plastic wrap under the lid so that the moisture from the fridge doesn't turn this into a big lump. Not a big deal, just an added step to keep it fresh.The short and sweet of it is that I would buy this yeast again.

Works well with Sourdough Discard!
Excellent flavor and rise. Used 1t/2C flour with mixture of organic all purpose and Palouse multi-purpose mixed together.These were sourdough discard loaves. Didn’t have time for long proofing, and this yeast gave plenty of rise to the dough and worked well with the sourdough discard. Will purchase again.

Dead yeast
I ordered this yeast to accompany the same companies GF bread flour, thinking that it would work the best. I made 4 loaves of bread, all of which really struggled to rise. Finally, tested the yeast and it was mostly dead. Some bubbling, but not nearly enough for a good loaf of bread. I’m going to buy something local next time and test it immediately. As you see in the photo, there is some bubbling, but in the last 15 min it should have tripled in size, which it did not.
