I have a king mattress that is 12” deep. Will a 15” pocket work or will it be too loose?

Our sheets are cut to fit mattresses up to 15" deep so anything below should be just fine. You'll have no problem with a 12" mattress which is relatively standard.

No this is Sateen. Percale sheets use a one-over-one-under weave while sateen fabric uses a one yarn under, three or four yarns over weave. Brooklinen does also make percale sheets.

what is the difference between a king and a California king?

A California King mattress is 72" wide by 84" long. A regular King mattress measures 76" wide by 80" long. Some people like extra length to accommodate being tall (or liking lots of pillows at the head of the bed), while others prefer the extra room to turn over on. The total area of the Cal King and regular King are close but the regular King has slightly more total inches of area.
