I am a bit of a Japanese knife snob, but by no means an expert. . The knives are Japanese inspired, but made in China. The Aus-10 is a good stainless steel and on par with my lower end VG10 Japanese knives. A HRC of 60 is probably on par based on the steel, but it takes time to find out.They were sharp out of the box. I did a paper cut test and they performed pretty good. We used them on sausage, and they cut through the casing effortlessly with no pressure.The serrations should help them stay sharper longer on ceramic plates if the hardness is correct

I have been wanting a Nice set of Steak Knives for quite some time. I had a basic set, but wanted something to dress up the table a bit more. Love these because they have a stunning wood handle, The knife says Steak knife without over taking the table setting.Oh and yes they work, slice through steaks, Mine a filet, husband New York. we have also used them for pork chops.Price is reasonable for this quality knife.
