Q: I’m wondering if it is two different standards, why can I can screw in one into another? Shouldn’t the be incompatible on thread step&shape?

NPT is US standard where as G is overseas. Yes they will thread in to each other but you won't have a good seal. The pitch of the threads are off just a little bit and then it will leak. I've already tried that just for my own thaughts on it and I couldn't get them to seal up right. So I put them on like I was supposed to and no leaks on my hot water heater that I ordered from overseas. It was way cheaper than the units here in the states. Most of the stuff we buy anyways comes from overseas. They just change up some of the things, and that's it. Will cost you at least 4 times more buying it here in the states. 139 for my heater and the local place had same thing for 900+. No thanks.

Q: Is this food safe? Can it be used with drinking water?

I used it it on shower pipe but it's ok for drinking water.

Q: Can these be used for a propane stovetop?

Most gas fittings are brass. But im not sure.
