Q: Would the spherical mold work for Chocolate?

I'm sure the Cube tray would work. The sphere might be difficult as the fill opening is quite small. The two pieces fit together well but I'd think you'd have a ridge on each sphere of chocolate where the two meet. Good luck!

Q: I’m having the worst time getting the ice out. what am i doing wrong? i had to run water over them to melt a little. it’s very tough to get out.

I don’t think there’s a magic trick to getting the ice out of the containers. On the square ones you have to be careful to get the corners out and then they come out rather easily. On the round ones, they can be a bear and I usually wait two or three minutes and then push them out once I remove them from the freezer. Good luck!
