Q: Does this product use transformers or are they simply pin-out adapters?

Not powered, no transformer, just a pin out. I tried a few of these to see if it would help with some feedback noise. It did not help. Sounded the same as the several other versions of these cat to rca adapters that cost significantly less.

Q: If my source is outputting 5.1 digital will the reciever be recieving a 5.1 digital signal?

This extender kit is considered as an audio cable extension so it will transmit whatever being sent from your digital audio source. If your digital audio source outputs in 5.1 digital signal, this extender kit will send the .same 5.1 signal to the receiver end.

Q: Out of curiosity, what is the impedance of the balanced signal on the CAT5 cable (NOT impedance at RCA jacks which is stated in description)?

The cable impedance of twisted pair cables is typically 100 Ω.
