Q: How well does it dice vegetables? I bought t mainly to dice vegetables.

Depends on type of vegetables. Broccoli, Brussels Sprouts for example, you'll end up with mush. Anything with firm body, e.g., potato, squash, cukes, onions etal works well, but depending on size you may have to cut into pieces to fit into channel. We also really like the attachment that lets you slice as you push thru the blade. Makes it fast to turn a potato into small cubes which we then toss into skillet for Home fries for a quick breakfast.

Q: how do you capture the cut food, or does it just flop on the counter or cutting board?

It does a good job of cutting my veggies for salsa. There is a slot where your knife will go. The cut pieces drop to the cutting board. The cutter has to be on a flat, stable surface because you use a ratcheting motion to feed the veggies into the chamber. Hope this helps.
