I want to make a spear with a bow staff and a 🔪 will it hold???

My 2 cents:  Put at least 1 pin through the 'staff' and the tool so it does not fall out under rugged use.  Two pins are much better.
Epoxy cement it too, but when you break it, the cement makes extra work to clean off.  Or, if you're a survivalist, learn how to make pine pitch glue and do the traditional early 'glue'; then go to the next step.
Whatever methods you use, look on the Internet on a knot tying site and learn how to do common "Whipping".
Use cold, wet nylon string that you stretch by pulling it tight and whip it.  Apply heat from a hair dryer or other source and that tightens the nylon like a vise into a hard plastic shield for the joint.  The semi-melted or melted nylon whipping is tough and durable and difficult to slice.  You can spear fish around oysters and the whipping will hold against the impact of the sharp shells.

Does it hold up better in hotter/wetter environments than Gorilla tape?

I havent tried gorilla tape, but t-rex is not good.  I tried it around one of those planters with oblong dome to resupport it and it did not stick well.  I didnt think it would because it lost its tack just pressing it on my finger a few times.  I expect it to be able to conform to objects shape and it did a poor job on that lil plastic grow box.  Ive tested 3 tapes so far and they all were junk.  I have an old roll some where from days gone by, barely anything on it .. it worked, I need to look at the inner roll and see what that is.  Im sick of so many bad products.  Is it my imagination or is there more poor products on the market since more ppl are buying online?  I really think ther is.  I also think companies pawn bad product off on us online, knowing most ppl will not return it.

Will this seal underwater in pool?

If you drain the pool and dry the leak site and put the tape on the inside of the pool - maybe.  Never tried it but wouldn't exprct it to stick on a eet surface - that would be "Flex Tape" at $19.99 as seen on TV.  As duct tape goes - this is ss close to ghe military 200mph stuff that I've seen.  The adhesive is so strong my wife can't get it off the roll!  She says, "That's why God created husbands!". Try it on a dry pool and let me know with a review.  Amazon has an excellent price on T-Rex, my fist roll cost me 50% more at a big box!
