Q: To what oven temperature (Fahrenheit) can this be used? Would love to use it more for hot dips. Thank you!

Well, it is ceramic/stoneware, and generally speaking, one can bake in stoneware (say, around 350 degrees). I would say to take care not to set the hot dish on a cold surface or plunge it into cold water (ceramic can crack with such temperature changes), but past that it should be ok. What a great idea, using it for dips - thanks for that!

Q: Can you put it inside the regular oven?

I don't think so. It is meant to keep the tortillas warm after heating them up. I heat mine up in the microwave using a damp paper towel and then transfer them to this warmer. This warmer does a great job keeping them warm.

Q: Do the dimensions listed (4" high) include the knob? (What is the height of just the bottom dish part?)

Yes. The bottom is about 2 1/2 inches tall. The lid and knob are just under 1 1/2 "". Total a little less than 4"".
